A Mouthwatering Soup Recipe
Add pumpkin to this delicious soup. The combination is a mouthwatering fusion worthy of being repeated again and again.
Ingredients:
1/2 to 1 lb pumpkin peeled and chopped
Chicken thighs or as you desire
2 tablespoons olive oil
5 cups of water
2 carrots chopped
2 turnips cut in halves
1/4 head 1/2 cabbage 2 leeks (cut in pieces)
2 garlic cloves sliced
1 large onion sliced
1/4 teaspoon ground black pepper
1/2 teaspoon cumin
1/2 teaspoon salt
1 sprig fresh thyme
Parsley
1 chicken bouillon cube (optional)
Instructions:
Heat the olive oil in a large wide pot over medium-high heat.
Add the chicken, and sear until browned, about 4 minutes per side.
Remove from the pot and set aside.
Add the onions, garlic, cumin and sautée for 5 minutes.
Return chicken to the pot and add 2 cups of water, enough to cover chicken, 1 bouillon cube, sprig of thyme, ground black pepper. Simmer for 20 minutes. Taste and adjust seasoning.
Add the pumpkin to the pot. Allow the pot to boil for 10 minutes then mash the pumpkin (use a potato crusher or fork). This will form as your base.
Add the vegetables to the pot, 3 cups of water, cover and allow to simmer for 20 minutes over low heat until the vegetables are soft.
Add fresh parsley leaves toward the end of cooking, so the flavor stays bright and intense.
To serve, ladle the vegetables into a bowl
