Baked chicken with Leeks and tomatoes recipe.

 


 

 Simple Meal Of The Day. 

 


 

Baked chicken with Leeks and tomatoes. A simple sublime dinner that's healthy, flavorful, and gluten-free.

 

 Ingredients: 

 

4 chicken leg quarters thigh and drumstick

 1 leek 

2 tomatoes cut into wedges 

2 garlic cloves sliced

 2 tablespoons extra virgin olive oil

 1/2 teaspoon turmeric

 1/2 teaspoon cumin

 1/2 bell pepper deseeded and chopped

 1 chicken bouillon cube (optional)

 1 tablespoon chopped parsley 

1 teaspoon lemon juice

 Lemon slices for garnish 

Thumb size ginger sliced 

1/4 teaspoon salt 

1/2 teaspoon Dried parsley 

1/2 teaspoon ground pepper 

1/2 cup water or chicken broth 

 

Instructions:

Preheat the oven to 425 degrees. 

 Season the washed and clean chicken skin side with salt, ground pepper and paprika. 

Drizzle with olive oil.

 I removed the skin from my chicken but it is optional. 

 Trim the leeks and remove any tough outer leaves. Cut in half lengthwise and thoroughly wash. Cut the leeks crosswise. 

 Peel and chop the garlic, onion and bell peppers. Bring a pan of 2 cups of water to a boil and add 1/2 teaspoon salt. 

 Wash and peel carrots, potatoes, turnips, slice into thick chunks, add to pan of water and allow to boil for 20 minutes. 

 In a bowl add 1/2 cup water, lemon juice, 1 crushed bouillon cube, cumin, turmeric, a pinch of ground black pepper, dried parsley and mix well. Set aside.

 In a bowl, combine the tomatoes, garlic, onions, bell peppers, ginger, leeks. Drizzle with olive and season with a pinch of salt and pepper. 

 Spray your baking pan with olive oil. Nestle the chicken in the baking pan among the leeks, tomatoes, bell peppers, onions, garlic and ginger. 

 Add your liquid mixture of lemon juice, 1 crushed bouillon cube, cumin, turmeric, a pinch of ground black pepper, dried parsley that was set aside previously. As needed to keep vegetables moist. 

Bake for 25 minutes, after, remove the dish from the oven and spoon the broth on top of the chicken. Continue cooking for another 20 minutes, or until the leeks are tender and chicken is cooked through. 

 Serve with vegetables or any side dish you desire.

 Tip: 

Always clean your leeks and vegetables. The first step is to get all of the little bits of dirt that can hide out in between the layers of your beautiful leeks. All it takes to do that is to slice off the white and light green parts of the leek and soak them in some water. We usually soak vegetables in vinegar water first.
