Rice pudding baked Recipe
Rice pudding, with leftover rice. A creamy, rice pudding with a golden-brown crust that tastes divine.ð This recipe is a great way to use up leftover rice. So give that leftover rice in your fridge a makeover and turn it into an amazing dessert! You can enjoy warm or cold, for breakfast, or even as a snack. It’s a delight on its own or with some fruit or jam.
Ingredients:
1-1/2 cups cooked rice
1/4 cup raisins(optional)
2 large eggs
1 tablespoon butter
1-1/2 cups whole milk
1/2 cup granulated sugar.
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon ground nutmeg Additional milk, optional
Instructions:
Preheat oven to 350F and grease a casserole
In a large mixing bowl.
whisk together the milk, melted butter, eggs, sugar, vanilla, cinnamon, nutmeg, and salt.
Stir in the cooked rice, breaking apart any clumps.
Pour the mixture into the prepared casserole.
Bake, uncovered, at 350F for 20 mins, then remove from oven and drizzle over top with caramel.
Put back in the oven and continue baking for about 25 minutes or until a knife inserted in the center comes out clean.
Cool.
Refrigerate leftovers
