 Hearty Beef Stew Recipe πŸ’™πŸ˜‹πŸ₯˜✨️ 

 


 

 In this hearty beef stew recipe, the beef is browned using the traditional ‘burning of the sugar’ method. You can get any number of beef stew variations depending on where you are in the world. Many beef stews include carrots and potatoes; the potatoes not only add to the heartiness of the dish but the starch they contain also helps to thicken it. The result is a deliciously satisfying stew that's sure to become a family favorite. As with everything in Caribbean cuisine, the ingredients you use in this recipe is based on your own taste preferences. And what you have at home. Hearty Beef Stew With Caramelized Sugar Recipe. 

 Ingredients: 

 1 1/2 pounds cubed beef 

2 potatoes medium, peeled and cut into 1 inch pieces 

1 1/2 tbsp vegetable oil/ optional 

1 1/2 tablespoon brown sugar 

1/2 teaspoon dark soy sauce / optional 

2 sprigs thyme 

1 tablespoon chopped parsley 

3 cups water 

Salt to taste 

1/4 teaspoon black pepper or cayenne powder 

1 beef bouillons cubes / optional 

1 onion chopped 

3 garlic cloves, 2 minced, 1 whole 

1 cinnamon stick 

1/2 red bell pepper, chopped 

1/ green bell pepper chopped 

1/2 teaspoon tumeric 

1/2 teaspoon bay leaf powder or one bay leaf / optional 

1/4 teaspoon ground paprika 

1/2 thumb sized ginger, peeled or grated 

1/2 teaspoon cumin 

Tomatoes, diced (optional) 

 

 Instructions: 

Rinse beef with plain water. Drain well. Season with green seasoning, thyme, paprika, salt and black pepper. 

Allow to marinate for at least 1 hour or overnight. 

Stewing: 

Place a pot on medium heat, then add oil and allow it to heat for one minute. 

NOTE: Most people use oil to coat the base but I personally do not use oil. You can try both ways and decide. 

Add sugar. Allow the sugar to melt/caramelize and become frothy, then amber in colour. 

Stir until it becomes smokey and dark brown. With a long wooden spoon, stir the mixture. 

Add in the seasoned beef. Mix thoroughly to coat the beef in the browning sugar and to stop the sugar from caramelizing further. Once coated, allow the beef to cook undisturbed for two to three minutes before turning and allowing the pieces to cook on the other side for another two to three minutes. 

Add two tablespoons water. Cover the pot. For for 10-15 minutes on medium heat, allow the beef pieces to spring their own liquid and get a nice colour. Once it's fully coated with the brown colour, add potatoes, onions, garlic ginger, cumin, beef bouillon, other spices, soy sauce, add water slowly to partially cover the beef. Cover the pot and simmer on low heat for 20 minutes. Stiring occasionally. 

Uncover and add bell peppers, cumin, cinnamon stick, bay leaf, ketchup. Add more water and allow to simmer for 20-30 minutes until the beef is tender and sauce reaches your desired consistency. 

Taste and adjust salt accordingly. 

You can enjoy it with rice, macaroni pie, staples, beans or salad.
